Ingredients
- 1 lb (450g) ground beef, 80/20
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 packet of taco seasoning
- 8-10 corn tortillas
- 1 can of diced tomatoes, drained
- 1 cup shredded cheese, Monterey Jack or Cheddar
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- Optional toppings: diced avocado, sour cream, salsa, shredded lettuce
Instructions
- Brown the ground beef in a large skillet over medium-high heat, breaking it up with a spoon as it cooks
- Once the ground beef is browned, drain the excess fat and add the diced onion and minced garlic to the skillet
- Cook the onion and garlic until they are softened, then add the taco seasoning to the skillet and stir to combine
- Add the diced tomatoes to the skillet and stir to combine, then reduce heat to low and simmer for 5 minutes
- While the taco mixture is simmering, warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds
- Assemble the tacos by spooning the taco mixture onto a warmed tortilla and topping with shredded cheese, chopped cilantro, and any other desired toppings
- Serve the tacos immediately and enjoy
- If you want to make the tacos ahead of time, you can cook the taco mixture and store it in the refrigerator for up to 24 hours, then reheat it when you're ready to serve
