BBQ Mini Meatloaves

Ingredients

  • 1 lb (450g) ground beef, 80/20
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup BBQ sauce
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper
  2. In a large bowl, combine the ground beef, chopped onion, minced garlic, egg, breadcrumbs, Worcestershire sauce, dried oregano, salt, and black pepper
  3. Use your hands or a wooden spoon to mix the ingredients until they're just combined
  4. Do not overmix the meat mixture, as this can make the meatloaves dense and tough
  5. Use your hands to shape the meat mixture into 6-8 mini meatloaves, depending on the size you prefer
  6. Place the mini meatloaves on the prepared baking sheet, leaving about 1 inch of space between each one
  7. Drizzle the tops of the meatloaves with the BBQ sauce and sprinkle with shredded cheese
  8. Bake the meatloaves in the preheated oven for 18-20 minutes, or until they're cooked through and the cheese is melted and bubbly
