Ingredients
- 1 lb (450g) ground beef, 80/20
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 packet of taco seasoning
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 cup of uncooked white rice
- 2 cups of water
- Shredded cheese, for serving
- Sour cream, for serving
- Diced tomatoes, for serving
- Chopped cilantro, for serving
Instructions
- In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon as it cooks.
- Once the beef is browned, drain the excess fat and add the diced onion and minced garlic, cook until the onion is translucent.
- Add the taco seasoning to the skillet and cook for 1-2 minutes, until the flavors are fragrant.
- Add the diced tomatoes, red kidney beans, and water to the skillet, stir to combine.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, until the flavors have melded together and the liquid has thickened.
- While the beef mixture is cooking, cook the white rice according to the package instructions.
- To assemble the burrito bowls, place a scoop of cooked rice in the bottom of a bowl, followed by a spoonful of the beef mixture, and any desired toppings.
- Serve immediately and enjoy.
