Beef Burrito Bowls

I love making beef burrito bowls for my family on busy weeknights, it's an easy and delicious meal that everyone enjoys, made with seasoned ground beef, rice, beans and fresh toppings.

Ingredients

  • 1 lb (450g) ground beef, 80/20
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 packet of taco seasoning
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 cup of uncooked white rice
  • 2 cups of water
  • Shredded cheese, for serving
  • Sour cream, for serving
  • Diced tomatoes, for serving
  • Chopped cilantro, for serving

Instructions

  1. In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon as it cooks.
  2. Once the beef is browned, drain the excess fat and add the diced onion and minced garlic, cook until the onion is translucent.
  3. Add the taco seasoning to the skillet and cook for 1-2 minutes, until the flavors are fragrant.
  4. Add the diced tomatoes, red kidney beans, and water to the skillet, stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, until the flavors have melded together and the liquid has thickened.
  6. While the beef mixture is cooking, cook the white rice according to the package instructions.
  7. To assemble the burrito bowls, place a scoop of cooked rice in the bottom of a bowl, followed by a spoonful of the beef mixture, and any desired toppings.
  8. Serve immediately and enjoy.
