Ingredients
- 1 lb (450g) ground beef, 80/20
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 packet of taco seasoning
- 8-10 corn tortillas
- 2 cups of shredded cheese
- 1 can of diced tomatoes
- 1/4 cup of chopped fresh cilantro
- Salt and pepper to taste
- Cooking oil or butter for brushing tortillas
- Sour cream or salsa for serving
- Avocado or guacamole for serving
Instructions
- Heat a large skillet over medium-high heat and add the ground beef. Cook until browned, breaking it up into small pieces as it cooks.
- Once the beef is browned, add the diced onion and cook until it is translucent and starting to caramelize.
- Add the minced garlic and cook for 1-2 minutes, until fragrant.
- Add the taco seasoning and cook for 1-2 minutes, until the flavors are absorbed.
- Add the diced tomatoes (if using) and cook for an additional 2-3 minutes, until the mixture is heated through.
- In a large bowl, combine the cooked beef mixture and shredded cheese.
- Brush the tortillas with cooking oil or butter and place them in the skillet.
- Spoon the beef and cheese mixture onto half of each tortilla and fold the tortillas in half to enclose the filling.
- Cook the quesadillas for 2-3 minutes on each side, until they are crispy and the cheese is melted.
