Beef Quesadillas

I share my favorite beef quesadillas recipe, crispy, cheesy, and stuffed with seasoned ground beef, perfect for a quick and delicious dinner

Ingredients

  • 1 lb (450g) ground beef, 80/20
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 packet of taco seasoning
  • 8-10 corn tortillas
  • 2 cups of shredded cheese
  • 1 can of diced tomatoes
  • 1/4 cup of chopped fresh cilantro
  • Salt and pepper to taste
  • Cooking oil or butter for brushing tortillas
  • Sour cream or salsa for serving
  • Avocado or guacamole for serving

Instructions

  1. Heat a large skillet over medium-high heat and add the ground beef. Cook until browned, breaking it up into small pieces as it cooks.
  2. Once the beef is browned, add the diced onion and cook until it is translucent and starting to caramelize.
  3. Add the minced garlic and cook for 1-2 minutes, until fragrant.
  4. Add the taco seasoning and cook for 1-2 minutes, until the flavors are absorbed.
  5. Add the diced tomatoes (if using) and cook for an additional 2-3 minutes, until the mixture is heated through.
  6. In a large bowl, combine the cooked beef mixture and shredded cheese.
  7. Brush the tortillas with cooking oil or butter and place them in the skillet.
  8. Spoon the beef and cheese mixture onto half of each tortilla and fold the tortillas in half to enclose the filling.
  9. Cook the quesadillas for 2-3 minutes on each side, until they are crispy and the cheese is melted.
