Ingredients

  • 1 lb (450g) ground beef, 80/20
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup of mushrooms, sliced
  • 1 tablespoon of all-purpose flour
  • 1 teaspoon of paprika
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of butter
  • 2 tablespoons of all-purpose flour
  • 1 cup of beef broth
  • 1 cup of milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, chopped onion, minced garlic, paprika, thyme, salt, and pepper. Use your hands to mix everything together until it's just combined.
  3. Divide the beef mixture into 4 equal parts and shape each part into a patty. Make sure they're not too thick, as they'll puff up a bit in the oven.
  4. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Sear the beef patties for 2-3 minutes on each side, or until they're nicely browned. Remove the patties from the skillet and set them aside on a plate.
  5. In the same skillet, add the remaining 1 tablespoon of butter. Once melted, add the sliced mushrooms and cook until they're softened and fragrant, about 3-4 minutes.
  6. Sprinkle the flour over the mushrooms and cook for 1 minute, stirring constantly. This will help thicken the gravy.
  7. Gradually pour in the beef broth and milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook for 2-3 minutes, or until it thickens to your liking.
  8. Return the beef patties to the skillet and spoon some of the gravy over each patty. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the patties are cooked to your desired level of doneness.
