Ingredients
- 1 lb (450g) ground beef, 80/20
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 cup frozen peas and carrots
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
Instructions
- Preheat your oven to 350°F (180°C).
- In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon as it cooks, until it is no longer pink, about 5-7 minutes.
- Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
- Stir in the frozen peas and carrots, diced tomatoes, tomato paste, thyme, salt, and pepper. Bring the mixture to a simmer and let it cook for a few minutes until the flavors have melded together.
- Transfer the meat mixture to a 9x13 inch baking dish.
- Spread the mashed potatoes over the top of the meat mixture, making sure to cover it evenly.
- Sprinkle the shredded cheddar cheese and grated parmesan cheese over the top of the potatoes.
- Bake the casserole in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and the cheese is melted and bubbly.
