Shepherd's Pie

I love making Shepherd's Pie for my family, it's a hearty, comforting casserole with ground beef, vegetables, and mashed potatoes that's easy to prepare and budget-friendly

Ingredients

  • 1 lb (450g) ground beef, 80/20
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 cup frozen peas and carrots
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a large skillet, cook the ground beef over medium-high heat, breaking it up with a spoon as it cooks, until it is no longer pink, about 5-7 minutes.
  3. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent, about 3-4 minutes.
  4. Stir in the frozen peas and carrots, diced tomatoes, tomato paste, thyme, salt, and pepper. Bring the mixture to a simmer and let it cook for a few minutes until the flavors have melded together.
  5. Transfer the meat mixture to a 9x13 inch baking dish.
  6. Spread the mashed potatoes over the top of the meat mixture, making sure to cover it evenly.
  7. Sprinkle the shredded cheddar cheese and grated parmesan cheese over the top of the potatoes.
  8. Bake the casserole in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and the cheese is melted and bubbly.
