Ingredients
- 1 lb (450g) ground beef, 80/20
- 1 medium onion, finely chopped
- 2 cloves of garlic, minced
- 1 cup (115g) breadcrumbs
- 1 egg
- 1/2 cup (120g) ketchup
- 1/4 cup (60g) brown sugar
- 1 tsp (5g) dried oregano
- 1/2 tsp (2g) salt
- 1/4 tsp (1g) black pepper
- 1/4 cup (30g) grated cheddar cheese
- 1/4 cup (60g) chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C)
- In a large skillet, cook the chopped onion and minced garlic over medium heat until the onion is translucent
- Add the ground beef to the skillet and cook, breaking it up with a spoon, until it's no longer pink
- Drain the excess fat from the skillet and add the breadcrumbs, egg, ketchup, brown sugar, dried oregano, salt, and black pepper to the skillet
- Mix everything together until just combined, being careful not to overmix
- Transfer the meat mixture to a loaf pan or shape it into a loaf shape on a baking sheet
- Top the meatloaf with the grated cheddar cheese and chopped parsley
- Bake the meatloaf in the preheated oven for 45-50 minutes, or until it's cooked through and the cheese is melted and bubbly
