Classic Beef Meatloaf

I'm sharing my tender and juicy classic beef meatloaf recipe with a sweet and tangy glaze, perfect for a weeknight dinner with the family

Ingredients

  • 1 lb (450g) ground beef, 80/20
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 cup (115g) breadcrumbs
  • 1 egg
  • 1/2 cup (120g) ketchup
  • 1/4 cup (60g) brown sugar
  • 1 tsp (5g) dried oregano
  • 1/2 tsp (2g) salt
  • 1/4 tsp (1g) black pepper
  • 1/4 cup (30g) grated cheddar cheese
  • 1/4 cup (60g) chopped fresh parsley

Instructions

  1. Preheat your oven to 375°F (190°C)
  2. In a large skillet, cook the chopped onion and minced garlic over medium heat until the onion is translucent
  3. Add the ground beef to the skillet and cook, breaking it up with a spoon, until it's no longer pink
  4. Drain the excess fat from the skillet and add the breadcrumbs, egg, ketchup, brown sugar, dried oregano, salt, and black pepper to the skillet
  5. Mix everything together until just combined, being careful not to overmix
  6. Transfer the meat mixture to a loaf pan or shape it into a loaf shape on a baking sheet
  7. Top the meatloaf with the grated cheddar cheese and chopped parsley
  8. Bake the meatloaf in the preheated oven for 45-50 minutes, or until it's cooked through and the cheese is melted and bubbly
